Cuban Sandwich Casserole


Okay, I love Martha, but I am not to her level yet. I enjoy eating amazing food and our local grocer (Publix) offers some divine recipes for free. They even cook them up if you go shopping around dinner time. This recipe is one of favorites, well the whole family loves it. Whenever the Chicken Apple Sausage goes on sale, I stock up for this recipe.  Be sure to use my favorite relish, Wickles Relish. Once you make it, I want to hear about it!

PS I always double it because it is THAT good. Also, I substitute some ingredients and it still turns out amazing. We always use Turkey sausage, sometimes a different cheese, cut up pickles instead of relish, and I do not own complete seasoning (so I add my own garlic salt, onion powder, pepper).

Ingredients
4 oz Swiss cheese, cubed
2 tablespoons fresh cilantro, coarsely chopped
2 links apple chicken sausage (6 oz)
2 tablespoons extra-virgin olive oil
4 oz cooked ham cubes
1 (6.9-oz) box chicken-flavor rice mix
1/2 teaspoon Complete seasoning
2 1/2 cups water, divided
1/4 cup dill relish
1 teaspoon mustard

Prep
  • Cut cheese into small cubes.
  • Chop cilantro.
  • Cut sausage into bite-size pieces (wash hands).


Steps
  1. Preheat large sauté pan on medium-high 2–3 minutes. Place oil in pan, then add sausage and ham; cook 2–3 minutes or until lightly browned.
  2. Stir in rice seasoning (from mix), Complete seasoning, and 1/2 cup water; cook and stir 1–2 minutes.
  3. Stir in rice, relish, mustard, 1 tablespoon cilantro, and remaining 2 cups water, then cover; reduce heat to low and simmer 20–22 minutes (without removing cover) or until rice is tender and water is absorbed.
  4. Stir in cheese, then sprinkle with remaining 1 tablespoon cilantro. Serve.

oh i LOVE cuban sandwiches and if you had only seen what i had for dinner (which consisted of ice cream, a bagel, croissants and an apple fritter)....apparently it's national carb day....you would realize how  much I appreciate this!
